Once the water is boiling, add the chanterelles. Cover the pot, lower the heat to a simmer, and steam for 10 minutes. Remove the steamer basket full of mushrooms and let cool for 5 minutes. Transfer the chanterelles to freezer bags or well-sealed containers and place in the freezer.

Dry sauté the mushrooms in a large frying pan. When they give up their water, sprinkle 1 tablespoon of salt on them along with the thyme. Are false chanterelles edible?
They are delicious and highly prized edibles. Most experts think the False Chanterelle itself (Hygrophoropsis aurantiaca) isn’t actually toxic, though it has reportedly caused stomach problems in some. But this mushroom reportedly has very bitter taste.
One answer is, although the False Chanterelle is not known as a seriously toxic toadstool, there are reports that some people have suffered hallucinations after eating this species. The False Chanterelle should therefore be treated with caution, and we recommend that it should be considered as inedible.
