Gluten is the wheat’s natural protein, and it’s what gives baked goods their structure. When the dough is kneaded, these glutens develop and become elastic. Flours made from hard, high-protein varieties of wheat are called strong flours.
What does a wheat flower look like?
The wheat plant is a tall annual and typically grows to a height of four feet (1.2 meters). The leaves, similar to those of other grasses, appear early and are followed by slender stalks that produce flowers. Flowers that are fertilized produce seeds called grains or kernels.

Florets in wheat are very small, inconspicuous and green. They are arranged in an inflorescence called spike of spikelets. Each spikelet consists of three to five florets. The spikelets are sessile and arranged in an acropetal manner.
This is what our research found. they will probably only carry whatever type of wheat grows locally. Our mill only carries soft white wheat (pastry wheat). I cannot make a loaf of bread with only this type of wheat, so I had to find a source for hard wheat as well.

Look for wheat berries in any grocery or natural foods store, either with the rice and beans or in the baking aisle with various cereal grains. You may find them in the international foods aisle alongside other whole grains such as freekeh and bulgur. You can also purchase wheat berries online.
