Where do beef mince come from?

(November 2015) Ground beef, beef mince, minced beef, or minced meat (not to be confused with the mixture of chopped dried fruit, distilled spirits and spices referred to as “mincemeat”) is a ground meat made of beef that has been finely chopped with a large knife or a meat grinder.

This begs the query “What is minced beef called?”

Although its name suggests otherwise, this cut comes from the Round primal, and is found on the front end of the rear leg. Often fabricated into roasts, which are great when braised, but can also be cut into steaks or used for Ground Beef.

The regional specialty is exactly what it sounds like: Tips of sirloin steak, cut into bite-size pieces that are perfect for grilling, skewering for kabobs, or sautéing quickly in your favorite sauce. Steak tips are most often cut from the sirloin, but they can be cut from any part of the cow.
