This is what my research found. the lentils I have right now, for 1 cup (230 calories) are 40g of carbs, but 16g of those are fiber, and 18g of protein. Niece: “How can you be immune to cars? Even like, a Ferrari?” Lentils are around 2x the carb for same protein, but as something that can substitute a grain (ie. rice, bread), it is an excellent choice. I eat lentils frequently.
How many carbs are in cooked lentils?
In fact, 1 cup (180 grams) of cooked lentils provides 36 grams of carbs. Even when you subtract the 14 grams of fiber, it yields 22 grams of net carbs ( 7 ).

Do you consider fiber a protein or a carbohydrate?
I consider it protein since I do not like to “put” fiber into same category as “carbs” since fiber isnt digested and have no effects on blood sugar and ketosis(if interested in knowing). So when looking at total “carbs” I personally try to not count fiber when counting total carbs.
To summarise: beans have more protein in them than do other vegetables, they are also high in starch. But the protein in a bean is not as good as the protein from an animal or fish source in either quantity or quality.
