There are two ways to defrost smoked salmon: by putting it in the refrigerator or by placing it in cold water. If you have time in hand, place the salmon in the refrigerator 24 hours before you need to use it. Allow the temperature to rise till 35-40 F. Make sure you remove the packaging so toxin producing bacteria does not develop.
